Big taco night energy, Canuck style. These corn tortilla tacos start with BBQ flank steak marinated in a bright lime-cilantro vinaigrette, grilled until smoky and charred, then layered with creamy avocado, Northern Canuck Medium Salsa, crumbled feta, fresh cilantro, and a squeeze of lime.
Preparation
Ingredients
For the Steak
1 to 1.5 lb flank steak
2 tbsp olive oil
Juice of 2 limes
1 tsp lime zest
1/3 cup chopped fresh cilantro
2 cloves garlic, minced
1 tsp cumin
1/2 tsp smoked paprika
1/2 tsp salt
Fresh cracked black pepper, to taste
For the Tacos
8 small corn tortillas
1 avocado, sliced or mashed
1/2 cup Northern Canuck Medium Salsa
1/3 cup crumbled feta cheese
Fresh cilantro, for garnish
Lime wedges, for serving
Optional: thinly sliced red onion, shredded lettuce, jalapeño, or extra salsa
Directions
-
Marinate the steak.
In a shallow dish or resealable bag, combine olive oil, lime juice, lime zest, cilantro, garlic, cumin, smoked paprika, salt, and pepper. Add the flank steak and coat well. Marinate for at least 30 minutes or up to 2 hours. -
Grill the steak.
Heat the BBQ or grill pan to medium-high. Remove steak from marinade and let excess drip off. Grill for about 4–5 minutes per side, depending on thickness, until nicely charred and cooked to your liking. -
Rest and slice.
Let the steak rest for 5–10 minutes, then slice thinly against the grain. -
Warm the tortillas.
Char corn tortillas directly on the grill or in a hot pan until warm, lightly blistered, and flexible. -
Build the tacos.
Add avocado to each tortilla, layer in sliced steak, then top with Northern Canuck Medium Salsa, feta, cilantro, and a squeeze of lime. -
Serve it up.
Add extra salsa on the side and let everyone Canuck their own taco.
